Tucked into an intimate listed building on the Prinsengracht in central Amsterdam, John Dory is the creative project of owner and executive chef Sonny Speelman and chef Remco Kroeze, with Aernoud van der Meulen steering the front of house. Together they have built one of the city's most quietly celebrated fish restaurants.
